Creamy Sorbet-Gelato That's Healthy...Really!

You may not have tried my free  7-Day Food Strategy program yet.  It provides an opportunity to condition yourself to eat healthfully and eliminate known food elements that are inflammatory or downright bad for you. And 7 days is a good kick-start to influence new, more positive eating regimens. The program includes daily emails with details, recipes, etc..  So let me tell you about the healthy creamy ice-cream substitute I created.

I follow the program myself at least 4 times a year just to remind myself of good and bad food choices. In the process, I'm always experimenting with combining foods to satisfy my palate. In this way, food--which is important fuel for body and mind--becomes a fun adventure. My most recent creation satisfies my dessert cravings and offers a good balance of natural fructose (sugar), protein and healthy fats. It has no sugar, no GMOs, no artificial anything.   Here it is along with my variations:

    CREAMY STRAWBERRY SORBET--( I don't measure so here's roughly the ingredients):

    1 cup frozen organic strawberries
    1/2 frozen banana
    1 TBS vanilla extract
    1 TBS organic cold-pressed coconut oil
    1/8 cup Thai Lite Coconut Milk
    1 scoop vanilla whey protein powder (I use Bio-Chem's grass fed)
    4-6 ice cubes

    I use a Vitamix on high for about 2 minutes. Sounds like a fleet of jets taking off, but comes out creamy and delicious. If you want it less creamy, you can add more ice cubes or put it in the freezer for an hour before eating! It's like smooth, creamy ice-cream without any guilt!

    I originally experimented with a version using frozen mangos instead of strawberries (also fabulous!)


    CREAMY CHOCOLATE SORBET-GELATO (another variation in which I use a few more healthy fats by adding avocado, also makes it creamier)

    1/8 cup Thai organic coconut milk (not lite. Cold, kept in refrig)
    1 TBS Coconut Oil
    1 tsp Vanilla Extract
    1.5 TBS Organic Cocoa Powder
    1 Frozen banana
    1/3 Avocado
    1 scoop Vanilla Whey Protein
    5 ice cubes

    Again, I mix at high speed in my Vitamix for about 1-2 minutes until creamy. Serve immediately. Yummy!
